Midweek Munchies: What rift is contributing for the week

I didn't go to the store this week, so this is going to be a "Modified Midweek Munchie"! ha. I'm just going to type about some of my current favorite foods...

Making Ramen Nutritious!

Top Ramen, Oriental. It's vegan, yummy, 15¢ cheap, and it's quick and easy to make... and let's face it: if it takes more than 5 minutes of preperation and more than two dishes, this particular rift-person is Not going to make it! I hate to cook, okay?!

The ramen gets cooked up, according to the directions (two cups of water, nuked with the noodles for three minutes) and I start chopping vegetables. Out of the microwave, I add the flavor packet and stir in a good scoop of peanut butter. Throw in the broccoli and celery that are now bite-sized, and then nuke it for another minute. Now it's way too hot to eat, so I add some frozen peas and stick the bowl in the frige for about 10 minutes. This gives the noodles some time to soak up more of the water... it's still pretty soupy when it's done, tho!

Sweet Corn Bread

I just veganized the recipe on the side of the box of corn meal, and wow, it came out great! I think the secret is the super sweet Silk Very Vanilla soymilk. mmm, sweet.

Bread Machine Bread

I haven't made bread in a couple weeks, but I gotta say the bread machine was one of the most brilliant gifts ever! SO's mom got it for us a few christmas's ago and it is just so nice. Especially since I've found a recipe that comes out perfect every time. Fresh bread is one of life's joys, made so much better when you know exactly what went in to make it!

Granola

My mom sent us some homemade granola that has bits of dried apricot and cranberries and chocolate chips. And it is good. So good that I got out my granola book to see if I could try making some for myself.

Well, the recipes look intimidating, simply because there is an oven involved. heh. I try not to cross paths with the oven too often, corn bread and wacky chocolate cake notwithstanding. I will let you know when I gather up my courage and start buying the ingredients... but that's another Midweek Munchies Story.
